I’ve indulged in fried squash blossoms many a times, but I’ve never prepared them myself. Surprised myself with just how easy and fun it was to prepare, and grateful to be growing these beauties right in my backyard. 🌱 You can likely find these at farmers markets this time of year. Next, I might try them in some tortillas or a breakfast egg hash. Have you tried Squash Blossoms before? 💛 They are luscious!

For the batter I used equal parts flour and soda water with salt and pepper. For the filling I used whole milk ricotta, 1 egg, parmesan, lemon zest, salt and pepper. Fried in a neutral oil for just a few minutes and sprinkled with flaky salt. I measured with my heart. What a decadent treat!
