You must try this asparagus salad! It is so easy, and SO delicious. I even FORGOT the shaved parm (I LOVE PARM!) making this one vegan! I love shaved asparagus on pizza too 🍕 🤤 what’s your favorite way to eat asparagus?

Shaved asparagus salad with garlicky bread crumbs! Shaved asparagus tossed in EVOO and lemon, chopped walnuts, fresh mint and garlicky fried bread crumbs. Add some shaved parm for extra goodness! Almost always, I measure with my heart <3 Thank you Eden Grisham for the inspiration and recipe!

INGREDIENTS

FOR THE TOASTED BREAD CRUMBS:

  • 1 cup of panko bread crumbs, toasted

  • 2 tablespoons extra-virgin olive oil

  • 1/4 teaspoon kosher salt

  • 1 grated garlic clove

FOR THE SALAD:

  • 1/2 cup walnuts, toasted

  • 1 lb. asparagus, tough bottoms trimmed and shaved with a vegetable peeler

  • 1/2 cup grated Parmigiano Reggiano

  • salt to taste, I use Maldon

  • freshly cracked black pepper to taste

  • zest from 1 lemon

  • Juice from 1 to 2 lemons to yield 1/4 cup

  • 1/4 cup lightly packed mint leaves, optional

  • 1/4 cup olive oil
